These bars are heavy on peanut butter with a chocolate crust to round out the flavor.
For the crust:
- 1 bag brownie mix (for an 8 x 8 pan)
- 1 egg
- 1/3 cup oil
- 2 Tbs water
For the cake:
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups sugar
- 1 stick butter, softened
- 1/4 cup oil
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup peanut butter
- 1 (12 oz) can evaporated milk
Preheat the oven to 350. Grease a 9x13 inch pan and line with parchment paper. Mix the brownie crust ingredients together medium bowl, then pour into the bottom of the pan. Use a spoon to smooth to all the edges.
In a stand mixer, cream the butter and sugar until fluffy. Add the oil, eggs, and vanilla, and mix until combined. Add the peanut butter and mix fully.
In a separate bowl, stir together the flour, baking soda, and salt. Add about a third of the evaporated milk to the batter, then half the flour, a third of the milk, half the flour, and finish with the last third of milk, blending fully after each addition.
Pour the peanut butter batter over the crust and smooth the top with a spoon or spatula.
Bake for 30 minutes, then lower heat to 325 and bake an additional 20 minutes.
