This bright sauce livens up the salmon, and the sugar from the orange and honey reduces it to a thick flavorful syrup.
You'll need:
- 1 orange, juiced
- 1/4 c soy sauce
- 1 Tbs honey
- 1 Tbs minced garlic (3 cloves)
- 1 Tbs ginger paste or minced ginger
- 1/2 tsp sesame oil
- 1 bunch scallions, sliced into smaller pieces
- 2 salmon filets, skin-on
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp Old Bay seasoning
Sprinkle the salmon filets with salt, pepper, and old bay. Heat 2 to 3 Tbs oil in a skillet over medium heat, and add the salmon when it's hot, skin side up. Cook 5 minutes, then flip, and cook another 5 minutes until well done (or you can cook to your desired doneness). Set on a plate to rest.
Stir together the remaining ingredients. Pour into a small saucepan over high heat and bring to a boil. Let boil on high until thickened, about 4 to 6 minutes, then add the scallions and stir to coat. Let char until the sauce gets dark, then remove from heat.
Pour sauce over salmon and serve.
