Here's thing: I love sweet potatoes, but I don't like when people add sugar to them, like with sweet potato fries. This is a very, very simple recipe for mashed sweet potatoes, simply seasoned, and, due to their natural texture, they require a lot less liquid and flavor added in than regular mashed potatoes.
You'll need:
- 1 lb sweet potatoes (about 4 small ones)
- 2 Tbs butter
- 1 Tbs half-and-half or milk
- 2 tsp salt, or more to taste
- 1/2 tsp pepper, or more to taste
Peel the sweet potatoes and cut into 1-inch cubes. Add them to a pot and cover with cold water (they'll float, so just make sure there's enough water that if you push them down, they're covered).
Bring the water to a boil over high heat, then lower the heat a little so it doesn't boil over and let simmer 15 minutes - make sure it's easy to stab them with a fork when the time is done, or else let them simmer a few more minutes.
Drain the water and return the sweet potatoes to the pan. Add the milk, butter, and salt, and mash with a fork until it reaches the desired consistency.
Mix it up:
- If you like it sweet, add 2 Tbs maple syrup at the end
- For tangy mashed potatoes, add 1/4 c sour cream instead of the milk
