This is simple, straightforward roasted broccoli, that turns out crisp and caramelized and functions as an all-purpose side dish.
You'll need:
- 2 broccoli crowns
- 1/4 c olive oil
- 1 Tbs salt
- 1 tsp pepper
Preheat oven to 450 and grease and/or put foil on a baking sheet.
Chop up the crowns to your taste - the florets and stems are good but I usually cut off the really thick stem parts. And you can make them as large or small as you want.
Toss the chopped broccoli in a bowl with the olive oil, salt, and pepper. Spread the broccoli onto the baking sheet and bake 20 minutes without mixing or flipping.
Serve alongside a main dish or eat on its own!
Mix it up:
- Add crushed red pepper for a kick
- Use half broccoli and half cauliflower - same recipe exactly!
