Fanny Farmer Pumpkin Bread

 

This is a family recipe I found on Reddit, and added a sugary crumble on top. The brown sugar caramelizes as it bakes, giving it a crispy crust with a hint of ginger.

You'll need:

  • 1 1/2 c flour
  • 1 c sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1 c pumpkin puree
  • 2 eggs
  • 1/2 c oil
  • 1/4 c water
  • 2 Tbs butter
  • 1/4 c brown sugar
  • 1/4 tsp ginger

Grease and line a loaf pan with parchment paper. Preheat oven to 350.

Stir together all dry ingredients in a medium size bowl. In a separate bowl, blend pumpkin, eggs, oil, and water. Make a well in the dry ingredients and pour the pumpkin misture in, then stir until just blended. Pour into the loaf pan.

Combine butter, brown sugar, and ginger with a fork. Use your hands to crumble it over the loaf. Bake 50 minutes to an hour, then cool completely in the pan before removing to a plate.
