Fennel Frond Pasta


Usually recipes call for the fennel bulb to add subtle aromatics to a dish; I like this recipe because it lets you use the top part of the fennel! I adapted this from this recipe, using ground turkey instead and adding spices to replicate that sausage flavor.

You'll need:

  • 1 lb ground turkey
  • 2 tsp Italian seasoning
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/4 to 1/2 tsp crushed red pepper
  • 1/4 tsp fennel seeds
  • 1/4 tsp paprika
  • 1/4 c minced garlic
  • 1 c finely chopped fennel fronds
  • 1 lb farfalle
  • 3/4 c finely grated pecorino Romano cheese (about 3 oz)

Put a medium saucepan over medium heat. Add the ground turkey, Italian seasoning, black pepper, salt, fennel seeds, and paprika. Brown the turkey completely.

Meanwhile, bring a large saucepan of salted water to a boil. Add the farfalle and cook until al dente, about 10 minutes.

Add garlic and fennel fronds to the turkey, and let cook, stirring occasionally, about 5 minutes. Add 1/4 c pasta water into the turkey mix. Stir in the pecorino Romano.

Drain the pasta well. Pour in the turkey sauce and combine.
