I love cooking scallops - they're a cinch to prep and cook in no time. This time I made them on the grill, so they're done in five minutes start to finish and have those great grill marks. I adapted this from Epicurious, opting to process the sauce instead of dicing and mixing, and adjusting the herbs to give it even more flavor.
I recommend using a grill tray for the scallops - it saves you from trying to turn scallops on skewers or losing any in the grill. But if you don't have, use two skewers through each scallop instead of just one, so that they don't rotate around on the grill. (And, of course, you can always use the stove.)
You'll need:
- 2 lb large sea scallops, thawed
- 1 small lemon
- 6 garlic cloves
- 1/2 c fresh parsley
- 1/2 c fresh cilantro
- 1/4 c fresh mint
- 1 c olive oil
Check the scallops and move any tough muscles along the side. Salt and pepper them, then arrange them in the grill tray or on skewers.
Halve the lemon and remove seeds. Put the whole thing, skin and all, into a food processor with the garlic and herbs. Process until everything is chopped, then drizzle in the olive oil while continuing to process until everything is combined.
Preheat grill to medium-high. Grill the scallops about 2 minutes per side until just done, with the grill closed.
Serve topped with the lemon herb sauce.
