Here's an easy way to make your brownies seasonal - layer a caky pumpkin batter on top and cook it all together for a gooey dessert. No need to pre-bake the brownie layer, either. Just use a toothpick in a few different spots to make sure it's cooked through!
For the brownie layer:
- 1 - 10.25 oz brownie mix (for an 8x8 pan)
- 1/2 c chocolate chips
- 1/3 c vegetable oil
- 2 Tbs water
- 1 egg
For the pumpkin layer:
- 1/2 c pumpkin puree
- 1/2 c heavy cream
- 1 egg
- 1 tsp vanilla extract
- 3 Tbs sugar
- 2 Tbs flour
- 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
Preheat oven to 350 F.
Combine all brownie ingredients and pour into a greased, parchment-lined 8x8 pan.
Whisk together all pumpkin layer ingredients until well blended. Gently dollop onto the brownie layer and smooth with a spoon.
Bake 35 minutes, until a toothpick inserted in the middle comes out the clean. Let cool 30 minutes before removing from the pan.
