Not sure if you're craving taco meat? Salsa? Queso? Refried Beans? Now you don't need to decide - precook the beef, then either melt everything together on the stove or toss in a slow cooker before the big game.
You'll need:
- 1 lb 80/20 ground beef
- 2 Tbs taco seasoning (1 - 1 oz pkt)
- 10 oz pico de gallo or salsa
- 16 oz Velveeta cheese, cubed
- 30 oz refried beans
In a small saucepan, brown ground beef fully and drain. Return pan to the stove.
Stir in taco seasoning, pico de gallo, cheese, and beans. Cook on medium-low, stirring occasionally, until cheese is melted and sauce is warm, 10 to 15 minutes.
Serve hot with tortilla chips.
Makes about 6 cups.
Mix it up:
- Wanna use a slow cooker instead? After you cook the ground beef, dump that and the other ingredients into a large slow cooker and cook on high 1 hour or on low 4 hours, stirring occasionally so it melts together.
- Make it vegetarian - use 10 oz fiesta plant-based crumbles or regular ground plant-based beef in place of the ground beef. Bonus: You don't have to brown it in advance!
- If you don't have taco seasoning on hand, stir in the following:
- 1 Tbs chili powder
- 1 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
