Looking for a fresh garnish for your summer barbecues? Look no further! This is a basic ratio, but taste it and add more of whatever you'd like to your taste.
You'll need:
- 2 large Roma tomatoes, flesh removed and diced
- 1/2 small red onion, diced
- 1 jalapeno, flesh and seeds removed, diced
- juice from 1/2 lime
- 1/4 c chopped cilantro
- Kosher salt and pepper, to taste
Remove seeds and excess liquid from tomatoes, then finely dice. Peel and dice the onion. Dice jalapeno - leave flesh and seeds in for a spicy pico de gallo, or remove it for a basic mild recipe. Chop a handful of cilantro - about 1/4 c.
Add all ingredients to a medium bowl (the recipe makes about 2 cups). Add salt and pepper to taste.
